An anniversary get-a-way, and cheeseburger soup

My husband, Josh, and I were able to celebrate our five-year anniversary this weekend by getting out of town. We’ve both been so busy with work that it was nice to just get away together. And with colder temperatures coming in, I figure it’s the perfect time to warm up with a bowl of soup.

Last Friday was our five-year wedding anniversary, so Josh and I decided to spend the weekend in Sioux Falls. It really didn’t matter to either of us where we went, but we both agreed it was a great time to get out of town and just relax.

Josh outdid himself with surprising and spoiling me over the weekend. When we got to our hotel room, he had rose petals scattered across the bed and five Gerbera daisies (my favorites) on a table. Then he gave me a beautiful sapphire and pearl necklace that matches my wedding ring. As if that weren’t enough, he had Patti from Wards Bakery make us a beautiful round cake that resembled the cake she’d made us for our wedding.

We were able to relax the entire weekend. We spent most of our time in the hotel watching movies, relaxing in the Jacuzzi in our room and running down to the hot tub in the hotel. We did some shopping and found some great buys and over-indulged at our favorite restaurants.

Josh definitely went above and beyond to make our weekend special, and I can’t even begin to describe how much it meant to me. He surprised me again and again with everything he did for me. I thanked him, but that doesn’t seem like enough.

Since I’ve been blessed with being able to write this column for the paper, I thought I’d take advantage of it by thanking my wonderful husband once again here. Josh Halverson, thank you for everything you did for me last weekend and for everything you do for me every day. I appreciate it all and love you to pieces!

This week I’m sharing a great soup recipe that’s perfect to throw together in the morning and have it almost ready to go by the time you get home from work. It’s perfect for these chilly nights. Enjoy!
