Getting ready for Thanksgiving with Turtle Pumpkin Pie

Thanksgiving is just around the corner, and I’m especially excited for this holiday and the busy weekend following. Most of our plans have been made in advance, but we’re still working on some of the details, as we are trying to make the most of the holiday.

I always enjoy the holidays and getting together with family; especially family we haven’t seen for a while. Thankfully, we should be able to spend time with the majority of our family this year. We’ll be going to Dell Rapids first to spend time with my parents, brother and his family. Then, we’ll head back to De Smet to spend the rest of the day with Josh’s family at his parent’s house.

I’ve already discussed the menu with my mom and decided what to bring to her house. As usual, she’s worried about whether she will have enough food and everyone’s favorite Thanksgiving dishes. I guarantee she’ll have way more food than necessary, and we will all be stuffed by the time we leave.

I’ll be bringing the cheesy spaghetti corn that’s a family favorite and a macaroni salad that will be quick to whip up before we go. I’m hoping I have enough for both family gatherings, so I’m sure I’ll end up following in my mom’s footsteps and make way too much. Thankfully, they are both Josh’s favorites, so I’m sure he won’t mind if we have some left over for him to enjoy again.

Thanksgiving Day will be followed by more busy days. Friday I will have to get ready for a vendor show in Willow Lake and work at Grumpy’s that night. Saturday, I have the vendor show in Willow Lake until 1 p.m., and then a couple hours to get home, unloaded and get ready to go back to work at Grumpy’s.

Sunday is the day I’m most anxious for though, as my daughter, Alyssa, will be coming back home from Denver, Colo., for a few days, and I can’t wait to see her. I just hope the weather holds out, so she can get here and stay for the time she’s planned.

I hope you all have a wonderful Thanksgiving surrounded by those you love. If you are looking for a fast and delicious dessert to make for your gathering, check out this turtle pumpkin pie. It comes together fast and is delicious. Enjoy!
