Thank goodness for layers, and shortbread sugar cookies

One thing you can always count on during this time of year is lots of cookies and candy. That’s probably also why most people tend to gain a few pounds around the holidays. Good thing the temperatures also get colder, so we can dress in layers to cover that up!

With the colder temperatures, I think now is a great time to start baking cookies. Not only does it help keep the house warm, but on days when the temperatures will barely make it above freezing, I have absolutely no desire to go outside anyhow.

I always like to make several different kinds of cookies during this time of year, so there’s something for everyone. I make a few of our favorites that I know will be expected, and then I like to try at least a couple new recipes.

I never have to worry about making too many cookies with our bunch, but if I would somehow make even more than they could keep up with, cookies always make a nice gift. I could always take a variety of them to a family gathering or bring a few to a friend.

This recipe is one of my favorites from Pampered Chef. It’s super easy to make and only requires a handful of ingredients that I typically have on hand. The recipe is for a very small batch (only 6-8 cookies depending on size). It’s great for those who want to make a small batch of cookies for themselves, but when I make it, I always make several batches to make sure we have a bunch. Enjoy!
