A great Easter, and scalloped potatoes and ham

I hope everyone had a great Easter weekend. I definitely enjoyed Easter Day with my family for so many reasons.

First, I don’t think we could have asked for nicer weather. There was no snow or rain, and even the wind was calm for the day. It was a perfect day for the kids to do their Easter egg hunt and for the adults to sit outside and enjoy the weather.

Second, we definitely all ate well. My family all met at Chevy’s in Sioux Falls for their breakfast buffet, and the food was amazing. There were so many choices with breakfast dishes, Mexican food and a whole table full of desserts. We all ate way more than we should have, but it was all delicious!

When we went to my in-laws’ house later that day, there was another big spread of food for everyone to enjoy. Patty Halverson had a buffet of food available, which was impressive with the grandkids constantly needing her attention. It all looked delicious, but I was still so stuffed from the buffet earlier, I couldn’t eat another bite.

Of course, the best part of the day was being able to have everyone together. For the first time in almost five years, we were able to get some family pictures with everyone in them at Chevy’s. Then we were able to relax and enjoy time with almost everyone on my husband’s side. It was great!

The recipe I’m sharing this week is a delicious way to use up any leftover ham you may have from Easter. It’s a quick and easy recipe for scalloped potatoes and ham. Enjoy!
