Keeping it simple, and peanut brittle


Christmas is almost here, and I’ve finally gotten a start on some of my candy making. I’ve decided to keep it simple this year. I still have cookies to make, so I don’t want to start experimenting with any new candy recipes (no matter how delicious they look). Heaven knows even the simple recipes can cause troubles, so I’m sticking with my basics.

I started out with the easiest recipe I have, which is just melting almond bark and dipping pretzels in it. I was able to make a lot of candy this way just by using both white and chocolate almond bark. Then when I felt like getting fancy, I added sprinkles.

Then I moved on to my peanut brittle recipe that I’ve made for several years. Now this one scared me a bit, because last year when I made this same recipe, it was a complete mess.

I still don’t know what I did wrong last year, but somehow, I managed to ruin two batches of peanut brittle because of the wax paper. The first batch of brittle turned out with the wax paper melted into it somehow, and there was absolutely no saving it. The second batch was better, but the wax paper was stuck to the bottom. We peeled off as much as we could, but unfortunately a few unlucky people found pieces with paper still stuck to the bottom.

Thankfully, this year I had better luck with my brittle. I skipped the wax paper all together, so I didn’t have to worry about anyone having paper stuck in their teeth. I premeasured everything and was able to whip out two batches in no time.

This week I’m sharing my recipe for microwave peanut brittle. Besides the wax paper incident, this always turns out well for me and is really easy to make. Enjoy and Merry Christmas!
